Exclusively for Wave RBC.UA, chef and culinary blogger Alexander Ogorodnik has prepared a selection of simple recipes that will help diversify your summer menu and comfortably endure the hottest days.

Gazpacho: Tomato Refreshing Soup

This Spanish cold soup is perfect for hot weather. It requires no cooking, retains maximum vitamins, and serves as an excellent replacement for a full meal.

Ingredients:
- Tomatoes
- Bell pepper
- Cucumber
- Celery
- Onion
- Garlic
- Basil
- Vinegar (optional)
- Olive oil
- Salt, pepper

Preparation:
Chop all vegetables into large pieces. Add garlic, basil, vinegar, olive oil, salt, and pepper. Blend until smooth. Optionally, strain through a sieve for a smoother texture. Chill in the refrigerator for at least 2 hours.

"If the tomatoes are not sweet enough, add a pinch of sugar — this will balance the acidity and make the taste richer," advises Alexander.

Ochirka with Beetroot: A Bright and Hearty Option

Traditional ochirka gets a new twist thanks to the addition of boiled beetroot. The dish becomes not only refreshing but also visually appealing.

Ingredients:
- Boiled beetroot
- Cucumbers
- Dill
- Green onions
- Kefir
- Sour cream or natural yogurt
- Salt, pepper
- Apple cider vinegar or lemon juice (optional)

Preparation:
Grate the beetroot on a coarse grater, and chop the cucumbers into small cubes or grate them as well. Finely chop the dill and green onions. Mix all ingredients, add kefir and sour cream (or yogurt). Season with salt and pepper, stir well. Chill in the refrigerator for 30–60 minutes.

Serve with half a boiled egg, young boiled potatoes, and fresh herbs.

"For a more vibrant flavor, you can add 1–2 teaspoons of apple cider vinegar or a little lemon juice — this will make the dish even fresher and highlight the taste of the beetroot," notes the chef.
