Sometimes, even familiar ingredients can create a salad that impresses with an unusual combination of flavors: tender, sweet, and fresh notes complement each other, and the dish itself looks bright and appetizing. Styler editor Yuliya Lyushneva shares her own recipe for such a salad. The base of the dish is boiled or baked chicken, fresh lettuce, yellow tomatoes, and a signature cream cheese mass with pineapple, rolled in crushed hazelnuts. This combination makes the salad memorable: the nut crust adds crunch, the pineapple adds sweetness, and a dressing based on yogurt and two types of mustard adds a light piquancy.

The base: chicken, greens, and tomatoes

Preparation begins with the protein and vegetable components. Boiled or baked chicken is cooled and cut into small pieces. Lettuce leaves are washed, dried, and torn by hand, and tomatoes are cut into chunks. The author deliberately chose yellow tomatoes, explaining their delicate sweet taste that harmoniously complements the other ingredients. However, substituting them with red or pink tomatoes is perfectly acceptable depending on personal preference—the taste of the salad will not suffer, only its shade and sweetness balance will shift.

Pineapple-nut crust: the secret of the recipe

A distinct element of the salad is the cheese mass with pineapple in a nut shell. Hazelnuts are poured into a dry pan and roasted over low heat for about 3–5 minutes, stirring occasionally, until the nuts become fragrant; then they are removed from the heat, cooled, and finely chopped with a knife. Syrup is drained from canned pineapple, and the pulp is patted dry with a paper towel to remove excess moisture. The pineapple is chopped very finely and folded into cold cream cheese—using a thick, firm cheese is essential for holding the shape. Using a teaspoon, small portions of the cheese mass are separated and gently rolled in the crushed hazelnuts so that the nut crust covers the piece from all sides.

Dressing: a balance of sweetness and piquancy

The salad dressing is made from Greek yogurt, to which honey and French mustard are added, along with a teaspoon of honey, stirring thoroughly until smooth. According to the author, combining two types of mustard allows the dressing to have not only a sweet but also a slightly spicy taste. It is recommended to add honey gradually, adjusting to your own taste to avoid excessive sweetness. This approach results in a dressing that binds all ingredients together without overpowering their individual flavors.

Assembly, serving, and important notes

The salad is prepared immediately before serving: the leaves are laid out on two plates, topped with pieces of chicken, tomatoes, and the cheese mass with pineapple in the nut crust. The author pours the dressing over the finished salad so that the ingredients remain clearly visible and the nut crust does not get soggy prematurely. If the dish is prepared in advance, the sauce is added right before serving. Allergens noted in the recipe include dairy (lactose), nuts, honey, and mustard, which is important to consider when selecting ingredients and serving guests with food intolerances.
