On the shelves of bookstores and in antique shops, you can still find culinary guides that have become a true bridge between eras. A bright example is the book «Сучасна українська кухня» (Modern Ukrainian Cuisine), published in Kyiv by the «Technika» publishing house back in 1984. The authors, S. Shalimov and A. Shadura, recorded recipes in their pages that are today undeservedly forgotten, yet remain relevant due to their simplicity and heartiness.
One of such «sleeping» recipes is zucchini stuffed with meat and rice, baked in the oven under a sour cream-tomato sauce. Today, when the zucchini season is in full swing, this recipe from the Styler project becomes especially relevant. Vegetables are now juicy, accessible, and inexpensive, and the proposed cooking method turns a familiar product into a full-fledged festive dish.
The Secret of the Perfect Dish
The essence of the recipe lies in minimalism. No unnecessary ingredients, just meat, rice, onion, and an oven. However, the result is so rich that you want to cook this dish again and again. Zucchini for stuffing are pre-boiled in salted water. For the filling, the meat is cut into small pieces and passed through a meat grinder, adding boiled rice and slightly fried onion to the mince. The mixture is thoroughly salted and mixed.
The stuffed zucchini are placed in a casserole dish greased with oil. They are sprinkled with breadcrumbs on top, drizzled with oil, and sent to the oven to bake until fully cooked. Traditionally, the dish is served with a sour cream-tomato sauce, which perfectly complements the taste of the baked vegetable.
How to Choose the Right Zucchini
The success of a stuffed dish depends 90% on the quality of the main ingredient. For stuffing, it is important to choose a zucchini of the right size. Too large a vegetable will be tough and tasteless, while it is difficult to fit enough filling into a too small one. The ideal option is a zucchini 15–20 cm long and 5–7 cm thick.
When choosing, pay attention to the following signs:
- Skin: should be smooth, without dents, cracks, and dark spots. The color should be uniform, light green or yellow depending on the variety.
- Firmness: if you press the peel with a fingernail, it should press in easily. This is a sure sign of a young and juicy vegetable.
- Stem: should be fresh and green, not dry.
- Weight: a heavy zucchini of small size is a good sign, meaning it is juicy and dense inside.
Old or overgrown zucchini with tough skin and large seeds are not suitable for stuffing: the filling will not cook evenly in them, and the texture of the dish will be ruined. Thus, by following the advice from an old cookbook and choosing products correctly, you can recreate a taste that has not lost its relevance for decades.
