Homemade pastries made from soft enriched dough with a juicy berry filling attract attention with their aroma and original presentation. Editor Anastasia Ostapova adapted a popular video recipe from the culinary project 'Vypikai Liubov', offering her own version of airy raspberry knot buns without chocolate and with modified ingredient proportions.

Background and Adaptation of the Original Recipe

The recipe for raspberry and chocolate buns from the culinary project 'Vypikai Liubov' served as the basis. In the original version, the authors use enriched dough based on compressed osmotolerant yeast, complementing the berry filling with chocolate elements. The domestic modification aims for a pure berry taste without foreign additives.

The new version of the recipe uses dry yeast, adjusts the general proportions of the dough, and adds cornstarch to the raspberry filling. Thanks to this technological solution, the berry mass acquires the necessary density, does not spread during shaping, and is well held inside the layers of enriched dough.

Preparing Enriched Dough and Thick Filling

The process of creating buns takes from 2.5 to 3.5 hours of free time, including kneading, two proofs, shaping, and baking. For the dough, active dry yeast is pre-dissolved in warm milk with added sugar for 5–10 minutes. Then, flour, remaining sugar, salt, chicken egg, milk, and prepared yeast are combined in a bowl, gradually introducing softened butter.

Kneading the dough takes about 10–15 minutes by hand or up to 10 minutes using a kitchen mixer. The finished mass should be smooth, elastic, and soft. For the filling, fresh or frozen raspberries are heated in a saucepan with sugar, after which cornstarch diluted in cold water is added until thickened.

Shaping Knots and the Final Baking Stage

After rising in a warm place for an hour and a half, the dough is rolled into a 40×30 cm sheet. Half of the area is covered with cooled raspberry filling, covered with the second part of the dough, pressed lightly, and divided into eight strips about four centimeters wide.

Each strip is twisted into a tourniquet, formed into a loop, and the ends are neatly tucked under the base of the future bun. The shaped products are laid out on a baking sheet with parchment, allowed to rise for half an hour, greased with a mixture of yolk and milk, and sent to the oven until a golden crust forms.
