Pickled cabbage with carrots and bell peppers is a simple and versatile vegetable appetizer that pairs wonderfully with potatoes, meat dishes, and other homemade meals. Styler project editor Nataliia Kryzhanovska shared a quick-preparation family recipe that allows you to enjoy the results just four hours after pouring over the hot marinade.

Ingredients and Vegetable Preparation

This recipe uses one kilogram of white cabbage, although red cabbage can also be used if desired. The vegetable is thinly shredded to speed up the pickling process and make the texture as tender and crunchy as possible. Carrots are grated on a coarse grater or cut into thin strips.

Bell peppers are seeded and cut into neat strips, while garlic is chopped to give the appetizer a savory flavor. All prepared components—cabbage, carrots, peppers, and garlic—are placed in a large bowl and thoroughly mixed to ensure an even distribution.

Secrets of the Hot Marinade and Spices

In a separate saucepan, water, vegetable oil, salt, sugar, and a set of traditional spices—bay leaf, allspice, black peppercorns, and cloves—are combined. The liquid is brought to a boil while stirring constantly, which is necessary to completely dissolve the salt and sugar crystals. After removing from the heat, five percent apple cider vinegar is added to the saucepan.

The hot marinade is immediately poured over the vegetables, after which the mixture is gently stirred so the liquid coats every piece. Omitting the stage of boiling the vegetables themselves preserves their natural crunch and beneficial properties.

Storage Rules and Tasting

After the container with the vegetables cools slightly at room temperature, it is covered and placed in the refrigerator. Just four hours later, the appetizer can be tasted, though the dish acquires maximum flavor depth and expressiveness after sitting in the cold overnight. This recipe is intended for quick consumption and is stored exclusively in the refrigerator in a sealed container.
